Chocolate Peanut Butter Bars - Proceed with Addictive Caution
Most 12 step programs, from what I understand, state that the first step is admitting you have a problem. I have a problem when it comes to peanut butter. You add chocolate to the mix and I’m even weaker. Anything Reese’s puts out, I’m there. I own stock the company.
These chocolate peanut butter bars are too easy to make, in my opinion. Sure, they make appearances during the holidays as though they are something you pine over in the kitchen for hours. With each bite, you are dreading the hours in the gym. I get it. But they are worth it.
A brick of goodness….
Here’s what you need:
1 cup melted butter
1 cup creamy peanut butter (listen, this isn’t the time for the all natural sugar free stuff)
1 ¾ cup powdered sugar
2 cups crushed graham crackers
For the topping:
1 ½ cup chocolate chips (semi sweet or mild chocolate)
¼ cup peanut butter
Here’s what you do:
Line a 8 x 8 pan with parchment.
Mix peanut butter and melted butter until smooth. Beat in Powdered sugar and then fold in the cracker crumbs. Place in pan and spread.
Melt the chocolate chips and remaining peanut butter in the microwave in 20 second bursts, stirring in between. Pour over the peanut butter mixture base and chill for at least 90 minutes. Over night is even better. Remove from the dish and cut into bars.
Fluff it up:
Toffee bits
Reese’s Pieces
Peanuts
Whatever you’re feeling…
Please stop me before I hurt myself… on second thought, don’t.
NOTES:
Do NOT do like I did in the video an put the fluff up stuff (toffee bits, Reese’s pieces etc…) on top of the peanut butter graham cracker mixture and then add the chocolate. If you do this, then the chocolate may not “stick” to the peanut butter mixture. What you should do instead is fold it in with the graham cracker crumbs so that the “fluff stuff” is actually inside the peanut butter mixture.
I’m such an addict, I’ll often hide a few of these from others to have as a late-night snack with a cold glass of milk. Don’t judge me and I won’t judge you.
